Ingredients:

 

Makes 1 loaf



Dry Ingredients:

  • 1 cup brown rice flour

  • 1 cup oat flour (make sure its organic/gluten free)

  • 1 cup of organic oats (quick)

  • 2 tsp cinnamon

  • 1 tsp nutmeg

  • 1 tsp baking soda

  • 1/4 cup of coconut flakes or shredded

  • 1 cup whole or crushed walnuts

  • 1/4 cup dark vegan chocolate chips (optional)



Wet Ingredients:

  • 4 large ripe bananas (preferable previously frozen)

  • 1/4 cup unsweetened apple sauce

  • 1/4 cup unpasteurized honey

  • 3 eggs or egg replacer

  • 8 medjool dates, pitted & soaked in warm water for an hour

  • 1/4 cup coconut oil

  • 2 tsp. vanilla extract

 

​What to do:

 

Preheat the oven to 350F and line a bread pan with parchment paper.



 

In your blender, combine the soaked dates (don't add the water and make sure to discard the pits first) and all of the wet ingredients. Blend until all the ingredients are mixed.

 



In a bowl combine and mix all of the dry ingredients, except the nuts and save a little bit of shredded coconut for the top. Stir. Add nuts. Stir again. Next, pour in your wet ingredients and mix with a hand held electric mixer. Then pour into your bread pan on top of the parchment paper. Sprinkle the coconut on top.

 

Put in the oven for an hour. Check with a tooth pick and make sure it comes out clean. I had to add another 10 minutes. Place on a rack to cool. Enjoy!!





Sub in maple syrup or agave nectar instead of the honey to make it Vegan.
