Ingredients



Salad

  • 1 head of green kale, cut out the stem and rip

        into bite size pieces

  • 1 avocado, cubed

  • 12 cherry tomatoes, cut in fours

  • 1/2 head of broccoli, cut in chunks

Sauce

  • 1 cup of raw organic cashews, soak for at least an hour

  • 2 cloves of garlic

  • 1 tsp. of unpasteurized honey or agave nectar

  • 1/4 cup of extra virgin olive oil

  • 1/8 onion (optional)

  • 4 Tbsp. unpasteurized raw apple cider vinegar

 

 

What to do

 

1. Mix the Sauce ingredients in a food processor or a high speed blender until mixed. The mixture should be thick. If it's too thick to blend add more olive oil and apple cider vinegar.

​2. Wash kale and dry. Cut off stem and rip into pieces. Put into bowl. Cut vegetables and add to the same bowl. 

3. Pour the sauce on the kale and vegetables. Massage the sauce into the kale until fully covered and serve!

Normally this would feed six or seven people but we always have a second bowl. It's THAT good! If you don't have that many people to feed I recommend ripping up as much kale as you need and putting half of the sauce on top with veggies.
