Mandy's Tips for Everyday Health
Makes 3 cups Raw, Refined Sugar-Free, Gluten-Free, Vegan, Soy-Free
Ingredients
- 1 cup raw hazelnuts, soaked previously for
3 hours, rinse well
- 3 cups filtered water
- 3 dates
- 1/2 tsp. nutmeg
- 1/4 tsp. cinnamon
- 1 tsp. honey
- 1/2 vanilla bean, cut down the middle
What to do
1. Remove pits from the dates and soak in hot water for 10 minutes.
2. Blend hazelnuts, water, dates, nutmeg and cinnamon in a blender on high speed for 2 minutes.
3. Strain milk in a tea strainer or two layers of cheese cloth. If using a tea strainer stir inside the strainer to help strain the milk. Save the hazelnut pulp to make hazelnut cookies.
4. Wam hazelnut milk in a pot on the stove on low heat until it starts to steam. Add to glasses and add 1 tsp. honey and 1/2 vanilla bean.
5. Garnish with fresh nutmeg or cinnamon.
Keep in a sealed jar or container and store milk in the fridge. Will keep up to three weeks. Shake before drinking.
For anyone who doesn't like honey please sub in maple syrup.
