Ingredients

 

 

  • 1 mango, diced

  • 1/4 cup diced red onion

  • 1 red pepper, diced (about 1 cup)

  • 1 orange pepper, diced (about 1 cup)

  • Juice from 1 lime

  • 3 tbsp fresh mint leaves, parsley or cilantro, minced

  • 6 cherry tomatos, diced

 

What to do

 

 

Chop up ingredients and let soak in the lime juice for an hour before serving. Eat ontop of coconut rice or with tortilla chips! Sooo delish!
