Ingredients

 

Crust

  • 1 Tbsp. gluten-free yeast

  • 1 Tbsp. unpasteurized honey

       (1/2 tsp agave nectar for vegans)

  • 1/4 cup warm water

 

  • 3/4 cup almond flour

  • 3/4 cup potato starch

  • 1/2 tsp. celtic sea salt

 

  • 1 Tbsp. coconut oil (melted)

  • 1 1/2 tsp apple cider vinegar

  • 1 Tbsp. egg white or egg replacer (for vegans)

Toppings

  • pizza sauce

  • carrot, sliced

  • red pepper, diced

  • basil, choppped

  • onion

  • mushrooms, sliced

 

Taco 'Meat' (optional)

  • 1/2 cup walnuts

  • 2 sun dried tomatoes (from jar)

  • dash of sea salt

  • 1/2 tsp. garlic powder

  • 2 tsp. taco seasoning

 

 

What to do:

 

Fill  your sick with warm/hot water. Put your mixing bowl in the water and let heat up. 

 

Add your yeast, honey and warm water to the warm bowl and wisk. Leave the bowl in the warm/hot water. The yeast mixture will foam after 5 minutes (If it doesn't foam, discard and start again).

 

Add almond flour, potato starch and sea salt to a bowl and mix.

 

Add melted coconut oil, apple cider vinegar and egg white (or egg replacer) to a bowl and mix.

 

Once yeast mixture has foamed all the three bowls together and blend with a hand held mixture for 30 seconds on medium speed. Make sure it is fully mixed.

 

Grab mixture and form into a ball and place in a glass bowl. Place a tea towel over top and place in a warm area and let dough rise for 1.5 hours. If you have a dehydrator place bowl inside, covered with a tea towel and dehydrate on 110 degrees for an hour.

 

Dough will only rise about 1 cm.

 

Cut a piece of parchment paper to fit a cookie tray. Add melted coconut oil to the parchment papper. After dough has risen place it on the parchment paper. Oil hand and work dough a bit and then press it down on the parchment paper so it is easier to roll.

 

Pre-heat oven to 350 degrees.

 

Roll out dough into an oval to fit your cookie sheet, around 2mm thick.

 

Bake in the oven for 10 minutes on a low rack. Then add sauce and topings and bake again for another 10 minutes. Check bottom the pizza crust at 5 minutes.Broil on low if you like it toasted. Then serve!
