Makes 30 balls

 

Ingredients

 

 

Wet

  • 1/2 cup almond butter

  • 1/2 cup unpasteurized honey

  • 1 tsp. pure vanilla extract

  • 2 Tbsp. cocoa powder

  • 7 dates, remove pits and soak in warm

        water for 1 hour

 

Dry

  • pinch of sea salt

  • 2 cups gluten-free oats

  • 2 Tbsp. hemp hearts

  • 2 Tbsp. pumpkin seeds

  • 2 Tbsp. sunflower seeds

  • 1 cup raw nuts, ground (I used pecans and walnuts)

  • 1 tsp. chia seeds

  • 1 tsp. maca powder

 

 

What to do:

 

1. Heat a pan on low heat for 2 minutes. Take off heat and move from warm burner. Process dates in the food processor. Add almond butter, honey, vanilla, cocoa, and dates to the pan and stir well.

 

 

2. Blend or process raw nuts. Add dry ingredients to a bowl and stir. Add wet ingredients and stir. Mixture should be thick. 

 

3. Scoop out mixture and roll into balls and place in a freezer safe dish. Roll as many balls as you can out of the mixture. Make sure you lick the spoon! Add to the freezer until the balls are hard. You can take the balls off the freezer safe dish and add to a ziplock bag if you prefer.

 

Store in the freezer until they are all eaten up! 

 

You can roll them in cocoa powder, coconut flakes, or chocolate nibs if you like.
