Ingredients

 

Taco 'Meat'

  • 1/2 cup walnuts

  • 2 sun dried tomatoes (from jar)

  • dash of sea salt

  • 1/2 tsp. garlic powder

  • 2 tsp. taco seasoning

 

 

'Sour Cream'

  • 1/2 cup cashews, soaked 2 hours, rinse twice

  • 1/4 cup filtered water (may need more)

  • 1/3 lemon, squeezed

  • 1/2 tsp. unpasteurized honey (raw)

  • 1/4 tsp. taco seasoning

Salad

  • 7 pieces of lettuce. ripped

  • 1 avocado. diced

  • 1/2 medium tomato or 7 cherry tomatoes, diced

 

 

What to do:

 

 

Add all of the sour cream ingredients to a blender. Blend on low until totally smooth. May need to add more water. Should be a sour cream consistancy.

 

 

Add all of the taco meat ingredients to a food processesor or blender and blend until it starts to stick together.

 

 

Put it all together and enjoy every bite. The ground walnuts actually have a ground beef texture. 

 

Other options you can add are:

- salsa

- quacamole

- green onion

- sprouts

- red pepper, diced
