Ingredients
Taco 'Meat'

1/2 cup walnuts
-
2 sun dried tomatoes (from jar)

dash of sea salt

1/2 tsp. garlic powder
-
2 tsp. taco seasoning
'Sour Cream'
-
1/2 cup cashews, soaked 2 hours, rinse twice
-
1/4 cup filtered water (may need more)
-
1/3 lemon, squeezed
-
1/2 tsp. unpasteurized honey (raw)

1/4 tsp. taco seasoning
Salad
-
7 pieces of lettuce. ripped
-
1 avocado. diced
-
1/2 medium tomato or 7 cherry tomatoes, diced
What to do:
Add all of the sour cream ingredients to a blender. Blend on low until totally smooth. May need to add more water. Should be a sour cream consistancy.
Add all of the taco meat ingredients to a food processesor or blender and blend until it starts to stick together.
Put it all together and enjoy every bite. The ground walnuts actually have a ground beef texture.

- red pepper, diced
