Ingredients

 

  • 1/3 cup vegetable broth 

  • 4 stalks of celery 

  • 4 tbsp. vegan margarine 

  • 1 onion, diced 

  • 4 cloves garlic, minced 

  • 2 cups mushrooms, sliced 

  • 2 Tbsp. parsley, minced 

  • 1 Tbsp. fresh rosemary, minced 

  • 2 Tbsp. tarragon, chopped 

  • 1/3 tsp. salt 

  • 2 Tbsp. sage, chopped 

  • 6 cups vegan bread 

  • 1 tsp Mrs.Dash seasoning

  • coconut oil

 

What to do

 

Cut bread into large cubes and allow it to dry out over night on the counter. 

 

Pre-heat oven to 375 degrees and lightly grease a large baking dish with coconut oil. 

 

Turn the stove on to low/medium heat and melt the vegan margarine in a pan. Add the garlic, celery and onion. Let sauté for 10 minutes. Add the mushrooms and let cook until they are soft. 

 

Take pan off the heat and add the spices and stir. Add the bread cubes. Add vegetable broth by using a tablespoon until the stuffing is moist. 

 

Dump the mixture into your greased dish and cover with foil. Bake for 40 minutes. Enjoy!
