Ingredients:

 

  • 2 slices of gluten-free bread

  • 4 thin slices of red pepper

  • 4 thin slices of avocado

  • 3 thin slices of tomato

  • lettuce or spinach

  • Soy-free mayo, I used Chipotle Veganaise

  • Mrs. Dash

  • 1 Pickle, thinly sliced

  • Broccoli, thinly sliced (optional) 

  • 4 thin slices of cucumber

 

 

What to do

 

Put your gluten-free bread in the toaster and toast lightly

 

While the bread is toasting, cut all the veggies into thin slices

 

Once the toast is ready let it cool for a minute. Add chipotle mayo to both sides. Place everything on one side of the toast.

 

Sprikle a bit of Mrs. Dash on top and place the second piece of toast ontop, cut in half if you desire and enjoy!

 

This sandwich is great for kids lunches.
